Join Zoom in the browser, or have the app open. Microphone and system sound are already switched on in the recorder.
Press record and pick what to share. On Windows, share the screen with sound and the Zoom app is captured, voices and all. On a Mac, join the meeting from the Zoom web client in a tab and share that tab with its audio.
Stop when the meeting ends. The MP4 is in your downloads a second later. Drop it on the Transcribe tool for notes.

Zoom's own recording: Zoom records only when the host allows it, and cloud recording needs a paid plan. This records your own view on any account.
Mac and Windows differ: Windows shares system sound with the whole screen. A Mac shares sound only from a browser tab, which is why the web client is the way there.
Tell the others: In many places a meeting may only be recorded with the participants' knowledge. Say so at the start.

Does the host find out?

Zoom does not see a screen recording, so there is no notice. Tell the participants yourself; in many places it is required.

Will I hear the other people in the recording?

Yes, when the sound is shared: the screen on Windows, the Zoom web client's tab on a Mac.

How do I open Zoom in the browser?

Click the meeting link and choose "Join from your browser" under the app prompt.

How long can I record?

There is no time limit. A long meeting becomes one MP4.
