Will it change how I sound?

No. It takes away what isn't your voice and evens out the level. The words, the timing and the tone are exactly as you recorded them; nothing is re-spoken or made up.

What happens to music under the voice?

The tool is made for speech, so music behind a voice is treated as background and turned down. If you want to keep some of it, choose Natural, which leaves more of the room and the bed in.

Does it work on video?

Yes. Drop an MP4, MOV, WebM or MKV and pick "the video, with the new sound". The picture is untouched; only the sound is replaced.

Which loudness should I pick?

−16 LUFS for podcasts and voice-only audio, −14 for video and social feeds. Keep the level if you'll mix it yourself in an editor.
